Almond Butter Banana Pancakes & ch-ch-ch-chaaanges!

Biiiig things are happenin’ peoples! Lou’s inability to reside in one place for more than ohhh, say a few months, strikes AGAIN! I made it 5 months out here in San Diego. Better than the 3 months in Cleveland or Costa Rica, not quite as good as the 7 months in Chicago or the 6 in NYC, and obviously not nearly as impressive as the 21 consecutive years in New Hampshire. Woop woop. Still pretty deec though, yup, deec.

I’ma be straight up here. I haven’t totally loved SD. No lie peoples, no lie. Lemme break it dowwwwn. There are some places/cities/wherever that you just feeeeeeeel like there’s something about it that fits. You have a connection to the energy there and no matter how crappy a day you can have, there’s something about it that manages to lift you up. I felt that way in New York, and in Costa Rica. San Diego has never felt like home and never really filled me up with the warm fuzzies. Truth be told, this obsession with 364 day/year sunny-ness, well… it makes me feel bad. Seriously. Like I feel guilty like a leper when I choose to *gasp!* stay inside for a day. I’m sorry, but sometimes a b*tch just wanna sit in a comfy chair and read. The sunshine makes me feel like a bad person. That’s ridiculous. I am well aware.

So yea, I’m road trippin’ my booty home in just over a week. PSYYYYYCHED! Pumped to take a different route than last time around and see some new sights. Here’s the plan: San Diego – San Francisco – Salt Lake City – Boulder – Chicago – Niagra Falls – HOME. Should take about 10 days I think. Any suggestions for sights to see along the way??! This is my *second* favorite part, the planning. Favorite part, you ask? THE DRIVE DUMB@$$.

I love pancakes. Pancakes make weekends exponentially more awesome. These pancakes include nut butter and banana, which in turn increases the exponential multiplier all that much more. That sounded really scientific. EFFIN’ CHOW DOWWWWN.

ABBs Pancakes (Almond Butter Banana Pancakes – sadly they won’t actually help with your actual belly abs, but let’s just go w/ that name)

  • 2 Eggs
  • 1 Banana
  • 3 Tbsp Almond butter
  • 2 Tbsp almond flour
  • 2 Tbsp coconut flour
  • 2 tsp vanilla extract
  • Approx. 2-3 tsp coconut oil (for cooking in the skillet)
  1. Beat eggs in a medium mixing bowl. Break up banana and add to bowl along with almond butter. Mix that shizz around until the ‘nanner is mashed and the almond butter well incorporated. I like leaving the banana a little chunky, but hey, do whatchya want. 
  2. Add the two flours and the vanilla extract, mixing well. This batter is quite thick. 
  3. Heat coconut oil over medium heat in a large skillet and drop batter into skillet, pressing the batter out to make disk-like shapes. 
  4. Cook about 2 minutes or so per side. You can make a bunch of mini p-cakes or about 6 palm-sized ones. Toss some grassfed buttah or some ghee on there and BOOM! Hoo RAH. “Like a big stick a buttah” – if you don’t know Coffee Talk, you don’t know shizz. Unacceptable. To die foooah.
